FABULOUS (and I mean fabulous) TOMATO BASIL SOUP
4 cups of Tomatoes cup up
2 cups Tomato Juice
2 cups Vegetable Stock or Chicken Broth
14 washed fresh Basil Leaves
1 cup heavy whipping cream
1 stick of butter
Salt and Pepper to taste
1/4 tsp cracked black pepper
1/4 tsp cracked black pepper
Combine the tomatoes, juice/stock, in a sauce pan and simmer for 30 minutes. Puree (infusion blender is the best) or put the basil leaves in a blender. Then add the butter and cream while stirring under low heat. Serve with bread. I like a fresh hard bread like a french baguette to dip into the soup.
