Dorito Casserole

In effort to find more dishes my kids will eat, I decided to try this new recipe from Charlie Gibson, who made it on the Rachael Ray show long ago. I read the ingredients and thought what's not to like about it. I was once again proven wrong. The kids liked the chips on the top and that was all they would eat. I guess next time I'll just give them a bag of chips for dinner. I however thought it was fun to make (the kids at least liked crushing the chips), and actually very tasty!

1 can chili with bean

2 cups sharp cheddar cheese, grated

1 large 12-ounce pkg Cheese Doritos (save 2 cups for casserole topping)

1 10-ounce can enchilada sauce

2 Tbsp. onion, grated (I just used onion powder)

1 1/4 cup sour cream

For the topping, set aside sour cream, 1/2 cup of grated cheese, and 1/3 of the Doritos bag.

Take remaining 6 cups of Doritos and crumble with your hands into mixing bowl. Mix the onion, and all the other ingredients, except those for the topping, and place into a casserole dish.

Bake for 20 minutes at 375 degrees. Remove casserole from oven. Spread on sour cream, cover with Doritos and sprinkle 1/2 cup cheese. Bake for an additional 5 minutes and serve.

  1. Johnny was helping me make a list of dinner ideas last night....after a while I noticed that most of the dishes were "kids food". I guess I have been making to many meals that we have to fight to get the kids to eaat lately! Mine would definitely rather eat a bag of chips on most occasions!!!!
