Lemon Butter Fish (or Chicken)

This is one of Ethan's favorites. He prefers it as chicken (see Blackened Mahi-Mahi story below), but it's easy to do some fish and some chicken. It's also very good with my "Shrimp with Style" pasta - omitting the shrimp when you serve it the lemon butter fish.

1 Tbsp butter
1/3 Cup Italian style dressing
1 lemon, zested and juiced
1 Tbsp Worcestershire sauce
4-5 breasts or fish fillets
Lemon pepper to taste
Garlic salt to taste
Onion powder to taste

Preheat oven to 350 degrees. Place the butter in a baking dish, and melt in the oven. Remove from heat, and mix in Italian dressing, lemon juice, and Worcestershire sauce.

Arrange fish or chicken in the baking dish, coating with the melted butter mixture. Season both sides of chicken with lemon pepper, garlic salt, and onion powder. Sprinkle with lemon zest.

Bake 25 minutes in the preheated oven, or until chicken juices run clear.
